There’s something about tacos that just makes cooking feel a bit more relaxed. Maybe it’s the fact they’re built by hand, or that there’s no real right or wrong way to put them together. They’re simple, a little messy, and always satisfying.
This week I’ve been cooking buffalo tacos, and it’s quickly become one of those meals I’ll come back to again and again. It’s got everything you want — flavour, texture, and that balance between something hearty and something fresh.
Buffalo mince works brilliantly here. It’s leaner than beef, but still full of flavour, which means you get that rich, savoury base without it feeling too heavy. Cooked with onion, garlic, and a good mix of spices, it develops a lovely crumbly texture that sits perfectly inside a tortilla.
What really brings it together, though, is the contrast. Warm, spiced meat, a cool spoonful of yogurt, and a scattering of fresh herbs over the top. That combination of hot and cold, rich and fresh, is what makes tacos so enjoyable to eat.
And the best part is how easy it all is. This isn’t a long, complicated cook. It’s a quick pan, a bit of chopping, and then assembling everything just the way you like it. Perfect for a midweek meal, but just as good when you want something casual and shareable.
