There are some sauces that feel almost tied to certain meals, and mint sauce is definitely one of them. The moment you smell fresh mint and vinegar together, it’s hard not to think of roast lamb and a Sunday table.
The funny thing is, mint sauce is one of the easiest things you can make in the kitchen, yet so many people still buy it in a jar. When you make it yourself, it tastes brighter, fresher, and somehow more alive.
All you really need is fresh mint, a little sugar, vinegar, and a pinch of salt. Finely chop a small bunch of mint leaves — the fresher the better — and place them in a bowl. Sprinkle over a teaspoon or two of sugar and a pinch of salt, then add a few tablespoons of boiling water to help everything dissolve. Finally, stir in a splash of vinegar. Malt vinegar works beautifully, but white wine vinegar is lovely too.
Give it a stir and let it sit for a few minutes. That little rest allows the mint to soften and the flavours to come together.
Of course, mint sauce is famous for pairing with lamb, and for good reason. The sharpness cuts through the richness of the meat perfectly. But it’s surprisingly versatile beyond that.
It’s wonderful drizzled over roasted new potatoes, stirred through peas, or spooned onto a lamb sandwich the next day. Sometimes I’ll even mix a little into yogurt to make a quick dressing for grilled chicken or roasted vegetables.
Like many simple things in the kitchen, mint sauce reminds you that good flavour doesn’t have to be complicated. Sometimes it’s just a handful of fresh ingredients and a few minutes of your time.
