Buffalo Kofta

Every now and then a recipe comes along that’s simple, full of flavour, and just a bit fun to make. That’s exactly how I feel about buffalo kofta. It’s one of those dishes where a few good ingredients and a handful of spices come together to make something really satisfying.

Kofta has been around for centuries in one form or another, usually made with minced meat mixed with herbs and spices, then shaped and cooked over heat. It’s comfort food in many parts of the world, and once you make it yourself, it’s easy to see why.

For this version I used buffalo mince, which I’ve been cooking with more and more lately. Compared to beef, buffalo is naturally leaner but still packed with flavour. It has a slightly richer taste without feeling heavy, which makes it perfect for recipes like kofta where the meat really needs to stand on its own.

The mixture itself is wonderfully straightforward. Minced buffalo combined with spices, garlic, onion, and a few simple seasonings, shaped into small sausage-like pieces and cooked until beautifully browned. As they cook, the spices bloom and the meat develops that deep, savoury crust that makes kofta so good.

What I love about dishes like this is how versatile they are. You can serve kofta in flatbreads with salad and sauce, alongside rice, or simply with roasted vegetables. They’re equally good for a relaxed midweek meal or something a little more interesting when friends come round.
